Moussaka My Way: Carbless Comfort Food

My husband loves lasagna but has sworn off carbs. My moussaka is the perfect antidote. Saute two eggplants in quarter inch thick slices (use┬áchicken stock–oil makes the result much greasier), adding salt, pepper and herbes de Provence. Saute a pound of lean ground beef, adding salt and pepper. Place a layer of the eggplant at the bottom of an oven dish, then a layer of ground beef, a layer of mozzarella and thinly grated Swiss cheese, and a layer of tinned tomatoes cut into small pieces. Now add another layer of eggplant on the top, a layer of tomato puree, and another layer of the cheese mixture. Bake at 300 degrees for 45 minutes. Voila! Comfort food for the carbless.
