Gateau D’Automne

I made this chocolate merinque/mouse/ganache cake over the holidays and it disappeared almost before it was served. I’ve put recipes on the blog before, but the complexity of this multi-layer concoction—it’s like three cakes in one—would mean a post the length of War and Peace. If you’re interested let me know and I’ll share the details. I will say that the combination of crispy meringue, creamy mouse, ganache frosting and thin bittersweet chocolate pieces sprinkled on top is sinfully addictive.
